Pan Fried Tofu over Mixed Greens

This is such an easy, quick meal. You can also serve this over brown rice instead of the salad. Or mix the tofu with steamed broccoli.

In a large pan heat 2 tablespoons extra virgin olive oil, 2 tablespoons tamari soy sauce, 2 tablespoons maple syrup, and 1 teaspoon freshly grated ginger root (or substitute with minced garlic if you prefer).

Add 1 brick of firm or extra-firm tofu that has been cut into cubes.

Pan fry on each side about 3 minutes, or until tofu begins to caramelize.

Remove from heat. Add on top of mixed salad greens that have been tossed in olive oil, vinegar, and sea salt.

Oh, wow. Looks really good. Tomorrow, I plan on cooking buddha's delight and I was searching for a tofu recipe and this looks great! Thanks!
